Available exclusively at Hackstons, Lala V is the new Provençal rosé created by Lady Eliza Spencer and the renowned family-run Domaine Tropez estate.

In conversation with Lady Eliza Spencer

1. What was your initial vision for Lala V?

“From the very beginning, our vision was to create more than just a rosé, we wanted to create a lifestyle. Lala V is about celebrating life’s most meaningful moments, whether they’re big milestones or simple afternoons spent with people you love. We wanted a wine that felt effortlessly elegant, beautifully crafted and approachable – something that people would genuinely want to have on their table and share with friends.” 

2. How did you take Lala V from idea to product? What was your involvement?

“Lala V has been a true passion project for both my business partner Channing and me. We have been involved in every stage of the process, from developing the concept and finding the perfect winemaking partners in Provence, to blending, branding, packaging and building the identity of the brand. Channing has extensive experience within the drinks industry, which has been invaluable, while I have focused on the creative direction, storytelling and ensuring every detail reflects the world we wanted to create. It has taken a great deal of time, care and collaboration, but we never wanted to rush it. We wanted every decision to feel intentional.” 

3. Provençal rosés are already hugely popular. What makes Lala V stand out from the rest?

“For us, it starts with quality. Lala V is produced in the heart of Provence using exceptional fruit to create a beautifully balanced, elegant rosé. Beyond that, we wanted to build a brand with genuine heart. Lala V isn’t about exclusivity or taking itself too seriously; it’s about bringing people together and encouraging them to slow down and enjoy life’s beautiful moments. Every element, from the wine itself to the bottle and the brand, has been designed to feel timeless, refined and joyful.”

Of course it’s perfect for celebrations, long summer lunches, weddings and holidays, but some of the best moments are the simplest ones: watching the sunset with someone you love, sharing dinner with friends or taking a moment to slow down at the end of the day. We created Lala V to be part of those moments that become the memories you treasure.”

The estate behind Lady Eliza’s vision

Lady Eliza’s search for ‘the perfect winemaking partners’ led her to Domaine Tropez, an independent, family-owned estate of 50 hectares in the heart of the Gulf of Saint-Tropez, within the Côtes de Provence appellation. Founded in 1930 by Tropez Beraud, grandfather of the estate’s current owner, it remains the only estate permitted to carry the ‘Tropez’ trademark.

The terroir is classic Mediterranean: schist, clay, limestone and sand, giving the wine its characteristic freshness and minerality. Farming follows biodynamic principles, and the grapes are harvested at night – by hand and by machine – to preserve their freshness and aromatic integrity before they reach the estate’s modern, purpose-built cellar. It’s the quality Lady Eliza points to directly: the estate’s exceptional fruit, handled with a respected family-run winemaker’s care.

Grenache, Cinsault, Syrah: the blend behind the balance

The grapes do the rest of the work. Grenache forms the backbone, contributing structure, aromatic richness and ripe red fruit. Cinsault brings finesse – delicate florals and freshness that lift the aromatics and soften the blend. Syrah adds depth, a touch of dark fruit intensity and structure.

Together, the three grapes strike the balance of freshness, elegance and richness that Lady Eliza set out to achieve – the ‘beautifully balanced, elegant rosé’ she describes as the whole vision for the project.

Tasting notes: sunshine, shared moments and simple pleasures

  • First pour. A pale pink rosé with salmon reflections, opening with a bright, lively bouquet of succulent summer fruit.
  • Mid palate. A lively acidity gives the wine what the winemaking team describe as a ‘crunchy’ character – a fresh, almost tactile snap, not unlike biting into ripe fruit – red berries, citrus and stone fruit.
  • Lingering finish. The flavours stay balanced and consistent from first sip to last, with a smooth, clean texture and no single element overpowering the rest.
