Michel Couvreur’s Special Vatting is a whisky with one foot in Scotland and the other firmly in Burgundy, shaped by the house’s distinctive approach to ageing and maturation. Rather than focusing on distillation alone, Couvreur became known for sourcing malt whiskies and maturing them in the cool cellars of Bouze-lès-Beaune, often in carefully selected sherry casks. Special Vatting leans into that generous, old-school style with the added depth of peated malt, bringing together smoke, richness, spice and a rounded texture. Expect dried fruit, orange peel and toasted nuts alongside honey, cocoa, soft oak and a savoury thread of peat smoke. It feels full and warming without losing balance, with the sherry cask influence adding depth while the peat gives it lift and character. Smooth, smoky and quietly indulgent, it’s a whisky made for slow sipping rather than rushing.
