Comtes de Champagne Blanc de Blancs is Taittinger's finest expression of Chardonnay, produced only in exceptional years from five Grand Cru villages in the Côte des Blancs. Only the first pressing is used, with a small portion of the wine aged briefly in new oak before an extended maturation in the house's ancient chalk cellars beneath Reims. The 2004 vintage brought elegance and balance, and two decades of development have added richness without taking away its clarity. Lemon, white peach and green apple sit alongside brioche, almond, honey and subtle toast, with chalky minerality and a fine, persistent mousse carrying the finish. There's softness and maturity here, but also enough freshness to keep the wine beautifully composed. Refined, creamy and quietly luxurious, it's ideal with shellfish, turbot or roast chicken.
