Part of Waterford’s groundbreaking terroir-focused approach to Irish whiskey, Ballykilcavan Edition 1.1 represents the second release made exclusively from barley grown by David Walsh-Kemmis in County Laois. Distilled in early 2016 from the 2015 harvest and bottled in July 2020, it matured for just under four years in a combination of American oak, French oak, and vin doux naturel casks. As with all Waterford Single Farm Origin bottlings, it showcases the individuality of place, farming practice, and meticulous production.
