On one hand, you have the huge whisky distilleries that have perfected a system, seamlessly churning out bottles faster than you can say “single malt.” The smaller, boutique distillers, on the other hand, prioritise quality over quantity. And then there’s Daftmill, rare, elusive and unique in every sense of the word. Speaking of which…
Ever heard of a farm distillery?
No? We’re not surprised. They’re almost non-existent! But not all is lost. Daftmill is keeping the tradition alive, proving that whisky doesn’t just come from warehouses and slick marketing teams. It comes from the land, the seasons, and most importantly, a family refusing to cut those all-important corners.

Daftmill is, quite literally, a family operation. What you won’t find are big teams of marketers or global brand strategists. Francis and Ian Cuthbert, the brothers and sixth-generation farmers that founded Daftmill, run the farm, grow their own barley, and oversee every step of the whisky-making process themselves.
There’s no corporate interference, no pressure to scale up production, and, most importantly, zero interest in cutting corners. They like to do things the old-fashioned way. That’s just who they are.
Here’s where things get interesting. Daftmill only produces its liquid gold in summer and winter, when the farm work allows. Why? Because whisky-making fits around farming, not the other way around. Unlike the big players distilling 24/7, Daftmill only produces whisky when the land gives them the go-ahead. And since everything depends on the harvest, output is extremely limited, some years, only around 100 casks are filled.
To put that into perspective, some major distilleries produce that much whisky in a single day! So, when Daftmill releases a new batch, whisky lovers know to move fast, because blink, and you’ll miss it. In the whisky world, scarcity isn’t just another marketing ploy. It’s a fact of life. And Daftmill is in no rush.
How patient are they? Even after 13 years of distilling, the Cuthberts didn’t release a single bottle until 2018. That’s practically unheard of for a new distillery. But clearly, patience is Daftmill’s virtue.
Lowland whiskies are often dismissed as light and floral, but Daftmill brings something different to the table. There’s a distinctive malty character that’s hard to find in your average Lowlander. That’s because they use their own barley, grown in their own fields.
Their latest release? The barley for the Daftmill 15 Year Old Fife Strength was grown in the South fields, using the Optic variety, a once-beloved staple of the Scotch whisky industry. And the whisky? Expect custard, vanilla, citrus zest, meadow flowers, rhubarb, and gingerbread spices, all wrapped up in a dram that’s as elegant as it is complex.

And here’s a little twist: while Daftmill is known for its ex-bourbon cask ageing, this particular batch has a sneaky little ex-PX cask in the mix. Just one, but enough to give a subtle, sweet, dark fruit lift on the finish. A whisky with layers, depth, and a whole lot of character.
Better yet, because each batch is small, every release has its own unique personality. No mass production. No uniformity. One bottle might be fruitier, another maltier, you get the idea.
