A small copper pot still (endearingly named Annabelle) brings the juice to life. Think old-school, artisanal charm. Perched in the cooler highlands of Barbados, the Abbey’s rums benefit from the gentle trade winds. Why? This allows for slower ageing and deeper flavour, thanks to the maturation in American oak. ex-Bourbon casks.

The rums themselves? They’re made entirely from fresh sugarcane juice. This magical juice is carefully stored as syrup, a traditional Caribbean method, then diluted with pure spring water sourced nearby. Bottled from cask and free from additives and artificial colours, all of this builds to one beautiful bottle of small-batch, handcrafted magic.

Now, that’s what we call rum-making with soul. And with a whole lot of legacy in every drop.

Now, like many sugar estates in the Caribbean, St Nicholas Abbey’s origins are intertwined with colonialism. And this is obviously something that’s worth addressing.

Today, under the new ownership, the Abbey has reclaimed its space with purpose. They consciously invest in local jobs, sustainable agriculture, and preservation through education.

Simply put, both the 12 and 20 year old rums are more than just pretty bottles. They’re as beautiful in the glass as they are on the shelf. That itself is worth cheering over. 

The 12 Year Old is medium-bodied with a long, balanced finish and a perfect intro to what the estate has to offer: refinement and patience.

As for the 20 Year Old? Expect a rare single cask rum with a finish smoother than jazz in a smoky bar. 

Think layers of molasses, spice, pipe tobacco, dark chocolate and roasted nuts (delicious). 

The appearance? A clear light golden amber. On the nose, you’ll find hints of spice and cinnamon, fudge, vanilla, milk chocolate and a whisper of tobacco.

On the tongue, you’ll taste dried fruit, bitter orange and five different kinds of spices. Perhaps they were just feeling generous…

Finished with notes of apple, it’s originally blended from the Foursquare distillery.

If you ask us, this rum is bold, contemplative and undeniably grown-up. 

All in all? The rum is just as impressive as the pretty glass decanters.
