Les Grèves is widely regarded as one of Beaune’s finest Premier Cru vineyards, its gravelly limestone and clay soils giving the wines both structure and energy. Domaine de Montille owns a well-placed parcel here, farmed organically and biodynamically as part of the estate’s long-standing focus on terroir. The warm, successful 2015 vintage brought excellent ripeness, while vinification with 100% whole clusters added perfume, spice and a distinctly savoury edge. Red cherry, raspberry and wild strawberry sit alongside violet, pepper, earth and subtle stem spice, with firm but polished tannins giving the wine real shape. Elegant but far from delicate, it has the depth and mineral drive associated with the best of Beaune. Serve lightly cool at around 15–16°C, with roast duck, chicken, veal or mushroom dishes.
