Pierre-Yves Colin-Morey has become one of the defining names in modern white Burgundy, known for long, precise wines shaped by restrained oak and a distinctly mineral style. His 2012 Corton-Charlemagne brings together Chardonnay from parcels on the Aloxe-Corton and Pernand-Vergelesses sides of the hill, combining power with remarkable tension. Lemon, lime and green apple lead into white flowers, crushed stone and a touch of sea salt, with subtle cream and toast emerging as the wine opens. The palate is broad and mouth-filling, as Corton-Charlemagne should be, yet the acidity remains bright and the finish tightly focused. There is richness here, but also a chalky, architectural structure built for slow development. Serve at 12–14°C in a generous glass with turbot, lobster, scallops or roast poultry.
