Old vines often tell the best stories in Burgundy, and David Moret’s Chassagne-Montrachet Vieilles Vignes is a fine example. The Chardonnay comes from vines over 60 years old, rooted in limestone soils, where lower yields bring fruit with richness and depth. Fermented with native yeasts and aged in French oak, Moret keeps the winemaking gentle so the vineyard character can take centre stage. Pear, apple and tangerine mingle with notes of toasted brioche and a touch of butter, all balanced by fresh acidity. Rich yet poised, it feels just as comfortable with fish, poultry and creamy pasta as it does with a few years in the cellar.
