Released around 2005, this rare Japanese bottling is a quiet piece of whisky history, one that harks back to an era of true craftsmanship at Suntory. Distilled in 1981, the same year Hakushu’s East site first fired up its stills, this 10-year-old pure malt (100% malted barley) combines predominantly Hakushu spirit with a possible dash of Yamazaki for added complexity. What sets it apart is its maturation: “Kioke Shikomi” refers to ageing in traditional wooden tubs more commonly associated with sake production. Throw in bamboo-charcoal filtration and direct-fired stills, and you’ve got a whisky with technique, heritage, and style baked into every drop. The series has long been discontinued, and bottles have become harder to find even in Japan. With its light body, old-school production methods, and nuanced flavour, this is a delicate dram for the purist, and a genuine talking point for the collector.
Nose - Malty and lightly nutty, with a gentle earthiness and soft smoke. Hints of steamed greens and barley sweetness give it a quietly complex charm.
Palate - A clean, medium body with grassy warmth, white pepper spice, and a whisper of liquorice or smoke drifting in on the finish.
Finish - Precise, elegant and foresty. A graceful throwback to a bygone era of Japanese whisky, subtle, serious, and all the more desirable for it.
