Rathfinny Blanc de Noirs is the estate’s signature Sussex sparkling wine, made entirely from dark-skinned grapes grown on its south-facing vineyard in the South Downs, just three miles from the English Channel. The current 2020 release blends 86% Pinot Noir with 14% Pinot Meunier, fermented in stainless steel before spending 36 months ageing on its lees. A low dosage of 3g/l keeps the style dry and precise while allowing the ripe fruit to come through clearly. Pear, plum and red berries lead into cherry, subtle brioche and a gentle savoury note, with a fine mousse and fresh acidity bringing lift to the fuller Blanc de Noirs texture. Generous but still distinctly English in its brightness, it is a polished, gastronomic sparkling wine. Serve at 8–10°C with charcuterie, crab cakes, duck or venison.
