Ploussard is one of Jura’s most distinctive grapes, and Benjamin Benoît’s Chambines shows it at its most delicate. Sourced from a small, steep plot in Pupillin, the wine comes from vines rooted in red clay and marl, farmed by hand on slopes still ploughed by horse. Fermented with native yeasts and aged gently in old oak or stainless steel, the aim is simply to keep the fruit pure and vibrant. Expect wild strawberry, raspberry and redcurrant with a light floral lift and a touch of gentle spice. Pale, fragrant and wonderfully easy to drink, it works best slightly chilled and shared around the table.
