St Nicholas Abbey Rum is made exclusively from sugar cane juice, grown on the estate, harvested by hand and extracted using a steam press. The fermented can juice is distilled in a small batches through a traditional pot still before maturation in finest bourbon oak casks in the highlands of Barbados. Here the cooling trade winds and altitude create the perfect conditions for long aged rums of the highest quality.
