Clos des Mouches is one of Beaune’s most celebrated Premier Cru vineyards and a cornerstone of Joseph Drouhin’s range. The domaine owns a large section of the 14-hectare site on the southern side of Beaune, close to Pommard, with Pinot Noir and Chardonnay planted on clay, limestone and marl. The name refers not to flies but to the honeybees once kept on the hillside, known locally as mouches à miel. Farmed organically since 1990 and later biodynamically, the red is made entirely from Pinot Noir and combines the depth of the site with Drouhin’s elegant, finely textured style. Morello cherry, raspberry and blackberry sit alongside violet, pepper and gentle smoke, developing notes of tobacco, woodland earth and liquorice with age. Serve at 15–16°C, with a short decant when young, alongside duck, veal, roast chicken or mushroom dishes.
