Sassicaia changed the course of Italian wine, proving that Cabernet could thrive on the stony coastal soils of Bolgheri and eventually earning its own dedicated DOC. The 2014 follows the estate’s classic blend of 85% Cabernet Sauvignon and 15% Cabernet Franc. A cooler growing season encouraged slow ripening, producing a more restrained and aromatic Sassicaia with freshness at its core. After fermentation, the wine spent around 24 months in a combination of French oak barriques and a smaller proportion of American oak. Blackcurrant, red cherry and plum sit alongside cedar, Mediterranean herbs, graphite and gentle tobacco, with fine tannins and lively acidity giving the palate a graceful, linear feel. Serve at 16–18°C after about an hour in a decanter, with roast lamb, beef or grilled steak.
